Coconut rice is not just a healthy meal, it is also delicious, especially when you use matured coconuts.
If you have been longing to taste this delicacy but don't know how best to do it, then you need this.
There's no much difference in the method of preparing coconut rice and that of the normal jelof rice. Only that you have to use coconut water instead of the normal water.
Ingredients is required:
Coconut (one big ball)
Rice (as much as you want)
Fresh ground or sliced tomatoes
Chicken/beef(or any other meat)
Onions (2 bulbs)
Maggi cubes
Seasoning (optional)
Groundnut/vegetable
Salt and pepper to taste
METHOD OF PREPARATION
Before you cook Coconut Rice, you will need to first prepare your tomato stew if you don’t have some in the freezer, prepare your meat/chicken.
Place the pieces in a pot; add water till it just covers the pieces of chicken, add the chopped onions, maggi and thyme and steam. Cook it till it’s soft and add salt to taste. Put the pieces of chicken in a sieve to drain, and then fry with vegetable oil. You can also grill it in an oven. This is to give it a golden look with taste.
Now is the time to extract the coconut milk. Break the coconut into pieces with any iron, then pry out the coconut meat from the shell, wash the coconut meat and grind. If you are using blender, add small warm water for easy grinding. You can as well use greater.
Pour the mixture into a sieve with tiny holes so that none of the chaff gets through, then use your hands to squeeze out as much milk from the chaff as you can. Add more water to the chaff in a bowl and squeeze till theres no more milk coming out. Now, the coconut water is ready!

Parboil the rice with ordinary water(not with the coconut milk) and wash the parboiled rice and put in a sieve to drain. Now that all is set, the preparation is over. Cooking is next
Cooking Directions
Pour the chicken stock, coconut milk(not all) and the tomato stew into the a pot. Put on the stove to boil.
Add the parboiled rice, salt and pepper to taste.
Cover the pot and allow to boil. Reduce the stove to prevent the rice from burning.
Make sure to check at intervals to know if you need to add more water.
Cook for few munites( taste to confirm if the rice is done?.
Once dry, brng down.
Your coconut rice is ready for consumption
